Caribbean Green Seasoning Recipe – Episode 12

This green seasoning recipe is similar to the Sofrito used in so many Latin dishes. I make use of this almost everyday in my kitchen, so I always have a bowl on hand in the fridge. I use it in my curries, vegetable dishes, as well as when I am seasoning various meats. I know that there are many variations to this recipe, as everybody makes it their own way. This is the way that I make it and I made sure to keep the ingredients as simple and as minimal as possible. The seasoning will stay in your fridge for about a month, and will keep in the freezer for over 3 months as long as you keep it in an airtight container or ziplock bag.

Ingredients and Measurements:
2 bundles of culantro or chadon beni (30-40 leaves)
20 bird peppers (you can substitute another hot pepper of your choice- you can also substitute pimento peppers for a non-spicy option)
1 cup of garlic cloves (30-40 cloves)
water for blending
